Salad

Method

Croutons

  1. 1

    Prepare the Croutons

Preheat your oven to 375°F (190°C). Cut the focaccia bread into small cubes, about 1 inch in size. In a bowl, toss the bread cubes with olive oil, garlic powder, and salt until evenly coated.

  2. 2

    Bake the Croutons

Spread the seasoned bread cubes on a baking sheet in a single layer. Bake in the preheated oven for 12-15 minutes or until golden brown and crispy, stirring halfway through to ensure even browning. Remove from the oven and let cool.

Dressing

  1. 3

    Make the Dressing

In a blender or food processor, combine anchovy fillets, garlic, Dijon mustard, Worcestershire sauce, and lemon juice. Blend until smooth.

  2. 4

    Add Oil and Season

With the blender running, slowly drizzle in the olive oil until the dressing is emulsified. Season with salt and black pepper to taste. Adjust seasoning as needed.

Salad Assembly

  1. 5

    Prepare the Romaine

Wash and dry the romaine lettuce thoroughly. Tear the lettuce into bite-sized pieces and place it in a large salad bowl.

  2. 6

    Combine Ingredients

Drizzle the homemade dressing over the romaine lettuce and toss until well coated. Add the croutons and toss gently to combine.

  3. 7

    Serve with Parmesan

Sprinkle the grated parmesan cheese on top of the salad. Serve immediately for the best texture and flavor.
