Method

Cooking the Pasta

    Boil the Water

    In a large pot, bring 4 cups of salted water to a rolling boil.

    Cook the Orecchiette

    Add the orecchiette pasta to the boiling water and cook according to package instructions, usually about 10-12 minutes, until al dente.

    Drain the Pasta

    Once cooked, reserve 1/2 cup of the pasta water and drain the rest in a colander.

Making Crispy Garlic

    Heat the Olive Oil

    In a large skillet, heat the olive oil over medium heat until it shimmers.

    Cook the Garlic

    Add the minced garlic cloves to the skillet and sauté for 2-3 minutes, or until golden brown and crispy, stirring frequently to prevent burning.

    Add Red Pepper Flakes

    Stir in the red pepper flakes and cook for an additional 30 seconds to infuse the oil with flavor.

    Combine Pasta and Sauce

    Add the drained orecchiette to the skillet with the garlic mixture. Toss to coat the pasta evenly, adding reserved pasta water as needed to help combine.

    Garnish and Serve

    Remove from heat, stir in the chopped parsley, and serve immediately. Enjoy your crispy garlic orecchiette!
