Preparation
- 1
Season the Chicken
Pat the chicken breasts dry with paper towels. Season both sides with salt and black pepper.
- 2
Sauté the Chicken
In a large skillet over medium-high heat, add olive oil and 1 tablespoon of butter. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- 3
Cook the Mushrooms
In the same skillet, add the remaining tablespoon of butter. Add the sliced mushrooms and cook until browned and tender, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- 4
Add the Marsala Wine
Pour in the Marsala wine, scraping the bottom of the skillet to deglaze. Allow the wine to simmer for about 2-3 minutes until slightly reduced.
- 5
Combine with Chicken Broth
Stir in the chicken broth and bring the mixture to a gentle simmer. Return the chicken breasts to the skillet, spooning some of the sauce over them. Let simmer for an additional 5 minutes.
- 6
Finish and Garnish
Once the chicken is heated through, remove from heat and sprinkle with chopped parsley before serving.
