Beef Preparation

    Sear the Meat

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the short ribs with salt and black pepper. Sear the short ribs for about 3-4 minutes on each side until browned. Remove from the pot and set aside.

    Cook the Ribs

    In the same pot, add the beef broth, Italian seasoning, garlic powder, and onion powder. Stir well and return the short ribs to the pot. Bring to a simmer, then cover and reduce heat to low. Cook for about 2-3 hours or until the meat is tender and easily pulled apart.

Giardiniera Preparation

    Prepare the Vegetables

    In a medium saucepan, combine the carrots, celery, cauliflower, and red bell pepper. Add the pickling spices, white vinegar, water, and salt. Bring to a boil over medium heat.

    Pickling Process

    Once boiling, reduce heat and let simmer for 10-15 minutes until the vegetables are tender but still crisp. Remove from heat and let cool. Transfer to a jar and refrigerate for at least 24 hours before using.

Assemble the Sandwich

    Shred the Beef

    Once the short ribs are cooked and tender, remove them from the pot. Shred the meat using two forks and return it to the pot to soak in the juices.

    Prepare the Rolls

    Slice the Italian rolls in half. If desired, toast them lightly in the oven.

    Build the Sandwich

    Layer the shredded beef onto the bottom half of each roll. Top with provolone cheese and a generous amount of pickled giardiniera. Place the top half of the roll on and serve immediately.
