For the Grilled Ciabatta

Prepare the Garlic Mixture
Mince 4 cloves of garlic and mix with 1 tablespoon of olive oil, chopped fresh parsley, salt, and black pepper in a small bowl.

Grill the Ciabatta
Preheat your grill or grill pan over medium heat. Place the ciabatta halves cut side down on the grill. Grill for about 2-3 minutes until toasted and grill marks appear.

Serve
Remove the ciabatta from the grill and cut into individual pieces. Serve immediately with Sunday gravy.

Add Tomatoes and Seasonings
Pour in the crushed tomatoes. Stir in oregano, basil, sugar, salt, black pepper, and red pepper flakes. Mix well.

Simmer the Sauce
Bring the sauce to a simmer. Lower the heat and let it cook uncovered for about 30 minutes, stirring occasionally. This will allow the flavors to meld.

Finish the Gravy
Add fresh basil leaves to the gravy just before serving. Stir and adjust seasoning if necessary.
