Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water (110°F/43°C), sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix Ingredients

In a large mixing bowl, combine all-purpose flour and salt. Create a well in the center and pour in the activated yeast mixture along with the olive oil.

  3. 3

    Knead the Dough

Mix the ingredients until a shaggy dough forms. Transfer to a floured surface and knead for about 8-10 minutes until smooth and elastic.

  4. 4

    First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until it doubles in size.

Focaccia Assembly

  1. 5

    Prepare the Baking Pan

Grease a 9x13-inch baking pan with olive oil.

  2. 6

    Shape the Dough

After the dough has risen, punch it down to release the air. Transfer it to the prepared baking pan and stretch it out to fit the pan.

  3. 7

    Second Rise

Cover the dough with a damp cloth again and let it rise for another 30-45 minutes.

  4. 8

    Add Toppings

Once risen, use your fingers to create dimples all over the surface of the dough. Drizzle with olive oil, sprinkle with fresh rosemary and coarse sea salt.

  5. 9

    Bake

Preheat your oven to 425°F (220°C). Bake the focaccia for 20-25 minutes or until golden brown.

  6. 10

    Cool and Serve

Remove from oven, let it cool in the pan for a few minutes before transferring to a wire rack. Cut into squares and serve warm.
