Prepare the Brussels Sprouts
Trim the ends off the Brussels sprouts and remove any outer leaves that are discolored. Cut each sprout in half.

Cook the Pancetta
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes. Remove the pancetta and set aside, leaving the fat in the skillet.

Add Brussels Sprouts
Add the halved Brussels sprouts to the skillet, cut side down. Drizzle with the remaining olive oil, chili flakes, salt, and pepper. Stir to coat.

Cook the Sprouts
Cook the Brussels sprouts for about 8-10 minutes, without stirring, until they are golden brown and crispy on the cut side.

Finish with Orange Peel
Once the Brussels sprouts are crispy, add the orange peel and the cooked pancetta back to the skillet. Toss everything together for an additional 2-3 minutes to combine flavors.
Serving

Plate and Serve
Transfer the crispy sprouts to a serving dish. Top with dollops of ricotta cheese and season with additional salt and pepper if desired. Serve immediately.
