Preparation
- 1
Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.
- 2
Preheat the Grill
Preheat your grill to medium-high heat.
Cooking
- 3
Grill the Chicken
Drizzle olive oil on the grill and place the seasoned chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and set aside.
- 4
Prepare the Marsala Sauce
In a large skillet, add a bit more olive oil over medium heat. Add the sliced mushrooms and sauté for about 5 minutes or until they become soft and browned.
- 5
Add Garlic and Deglaze
Add the minced garlic to the skillet with the mushrooms and sauté for an additional 1-2 minutes until fragrant. Then pour in the Marsala wine, scraping the bottom of the skillet to deglaze. Allow it to simmer for about 2-3 minutes.
- 6
Add Chicken Broth
Pour in the chicken broth and bring the mixture to a simmer. Let it cook for another 5 minutes, allowing the sauce to reduce slightly.
- 7
Combine Chicken and Sauce
Return the grilled chicken breasts to the skillet, spooning the sauce over the chicken. Let it cook for an additional 2-3 minutes to heat through.
- 8
Garnish and Serve
Sprinkle the chopped parsley over the chicken and sauce before serving. Enjoy your Chicken Marsala!
