Calamari

Method

Preparation

  1. 1

    Prepare the Vegetables

Wash and slice the zucchini and bell peppers into thin strips.

  2. 2

    Prepare the Calamari

Clean the calamari by removing the outer skin, head, and innards. Rinse under cold water and slice into rings.

  3. 3

    Make the Calabrian Chili Aioli

In a small bowl, combine Calabrian chili paste, lemon zest, and 1 tablespoon of olive oil. Mix well and set aside.

  4. 4

    Seasoning Mix

In a small bowl, combine rosemary, chili flakes, salt, and black pepper. Set aside.

Cooking

  1. 5

    Sauté the Vegetables

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced zucchini and bell peppers. Sauté for about 5-7 minutes until they are tender but still crisp. Remove from the skillet and set aside.

  2. 6

    Cook the Calamari

In the same skillet, add the remaining 2 tablespoons of olive oil. Add the calamari rings and season with the prepared seasoning mix. Cook for 2-3 minutes until the calamari is opaque and cooked through. Avoid overcooking to prevent toughness.

  3. 7

    Combine Ingredients

Return the sautéed vegetables to the skillet, add lemon juice, and toss everything together for another minute to heat through.

  4. 8

    Serve

Plate the calamari and vegetable mixture. Serve hot with the Calabrian chili aioli drizzled on top or served on the side.
