Preparing the Fish

Clean the Branzino
Start by cleaning the branzino. Rinse under cold water, then pat dry with paper towels.

Prepare the Butternut Squash
Peel the butternut squash, remove seeds, and cut into 1-inch cubes.

Season the Squash
In a large bowl, toss the butternut squash cubes with olive oil, salt, black pepper, cinnamon, and nutmeg until evenly coated.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Roast the Squash
Spread the seasoned butternut squash on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes or until tender and slightly caramelized, stirring halfway through.

Bake the Fish
While the squash is roasting, place the branzino on a separate baking sheet lined with parchment paper. Bake in the oven for about 20-25 minutes or until the fish is cooked through and flakes easily with a fork.
