    Prepare the Fries

    Preheat your oven to 425°F (220°C). Cut the russet potatoes into fries and soak them in water for at least 30 minutes. Drain and pat dry. Toss the fries with olive oil, salt, black pepper, and paprika.

    Spread the seasoned fries on a baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

    Make the Gravy

    In a saucepan, combine the vegetable broth, gluten-free flour, soy sauce, garlic powder, onion powder, and black pepper. Whisk until smooth. Cook over medium heat until thickened, stirring frequently.

    Prepare the Tahini Drizzle

    In a small bowl, whisk together tahini, water, and lemon juice until smooth. Adjust the consistency with more water if needed.

Assembly

    Assemble the Poutine

    Once the fries are done, place them on a serving plate. Top with mozzarella cheese, diced tomato, shredded purple cabbage, and sliced cucumber. Drizzle with the gravy and tahini drizzle. Finally, sprinkle with chopped green onion and black sesame seeds to garnish.
