Prepare tomatoes
Wash and dry the tomatoes. Slice into 8 even slices about the same diameter as the mozzarella; if tomatoes are small, cut into wedges. Lightly season the tomato slices with a pinch of sea salt to draw out flavor.

Seasoning and finishing oil
In a small bowl, combine the extra-virgin olive oil and aged balsamic vinegar. Add the lemon zest (if using) and a small pinch of freshly ground black pepper; whisk briefly.

Assembly — classic stack
Place one slice of toasted bread on the serving platter. Top with a slice of tomato, then a slice of buffalo mozzarella, and then a single slice of prosciutto folded or draped loosely over the top. Tuck a fresh basil leaf between the mozzarella and prosciutto so it peeks out.

Alternative — plated antipasto
For a plated antipasti presentation, arrange alternating slices of mozzarella and tomato in a row or circle (like a Caprese). Drape prosciutto slices around or over the stack, distributing evenly so each serving gets a portion of prosciutto and mozzarella.

Finish and season
Drizzle the olive oil–balsamic mixture evenly over each assembled piece (about 1/4 tsp per piece). Sprinkle the remaining sea salt flakes and freshly ground black pepper across the mozzarella and tomatoes. Place remaining basil leaves on top or around the plate for garnish.

Serve
Serve immediately at room temperature so the mozzarella’s texture and prosciutto’s flavor are best enjoyed. Provide extra bread on the side and an optional small dish of extra olive oil and balsamic for guests to add more if desired.
