Tataki Preparation

Prepare the Marinade
In a mixing bowl, combine the soy sauce, mirin, sake, sesame oil, and grated ginger. Stir well until all ingredients are blended together.

Marinate the Tuna
Place the albacore tuna in a shallow dish and pour the marinade over it. Make sure the tuna is evenly coated. Cover and refrigerate for at least 30 minutes.

Sear the Tuna
Heat a non-stick skillet over high heat. Remove the tuna from the marinade and lightly pat it dry with a paper towel. Sear the tuna for about 30 seconds on each side, or until browned but still rare in the center.

Remove the seared tuna from the skillet and let it rest for a few minutes. Using a sharp knife, slice the tuna into thin, bite-sized pieces.

Arrange the sliced tataki on a serving plate. Drizzle with additional marinade if desired, and sprinkle sesame seeds and finely chopped green onions on top. Serve with wasabi and sea salt on the side.
