    Prepare the Soba Noodles

    Bring a large pot of salted water to a boil. Add the soba noodles and cook according to package instructions, usually about 4-6 minutes. Stir occasionally to prevent sticking.

    Drain and Cool the Noodles

    Once the noodles are cooked, drain them in a colander and rinse under cold running water to stop the cooking process. Shake off excess water and set aside.

    Prepare the Vegetables

    While the noodles are cooling, julienne the cucumber and carrot into thin strips. Chop the green onions finely.

    Prepare the Nori

    Using kitchen scissors, cut the nori sheets into thin strips or small squares.

    Make the Dipping Sauce

    In a small bowl, combine soy sauce and mirin. Stir well to mix.

    On a serving plate, arrange the cooled soba noodles. Top with the julienned cucumber, carrot, and chopped green onions. Sprinkle sesame seeds on top and place the nori strips around the dish.
