    Prepare the Rice

    Rinse the rice under cold water until the water runs clear. Combine the rice and water in a rice cooker, and cook according to the rice cooker's instructions. Once cooked, let it sit covered for about 10 minutes.

    Make the Unagi Sauce

    In a saucepan, combine the unagi sauce ingredients: mirin, soy sauce, and sugar. Bring to a simmer over medium heat, stirring until the sugar dissolves. Allow to simmer for 5-7 minutes until slightly thickened.

    Grill the Eel

    If using a whole grilled eel, slice it into bite-sized pieces. If you have raw eel, grill it on medium heat until cooked through and slightly charred. Brush the eel with the unagi sauce while grilling.

    Assemble the Dish

    In a serving bowl, place a generous portion of cooked rice. Top with the grilled eel pieces. Drizzle additional unagi sauce over the top and garnish with sliced green onions, sesame seeds, and pieces of nori.

    Serve immediately while hot, and enjoy your Unaju with a side of pickled vegetables or a light salad.
