Tonkotsu Ramen Preparation Steps

Prepare the Pork Belly
In a pot, combine the pork belly, soy sauce, mirin, sake, garlic, and ginger. Add enough water to cover the pork belly. Bring to a boil, then reduce to a simmer. Cover and cook for about 2 hours, or until the pork is tender.

Make the Broth
In a separate pot, bring the dashi stock to a gentle simmer. You can add additional soy sauce or miso for flavor if desired. Let it simmer on low heat.

Cook the Ramen Noodles
In boiling water, add the ramen noodles and cook according to the package instructions (usually about 3-4 minutes). Drain and set aside.

Prepare the Toppings
Once the pork belly is cooked, remove it from the pot and let it rest. Slice it thinly. Prepare the soft-boiled eggs by boiling them for 6-7 minutes, then plunging them into ice water before peeling. Slice the spring onions and prepare the nori sheets.
