Tonkatsu Preparation

Prepare the Pork
Place the pork loin on a cutting board. Use a meat mallet to pound the pork to an even thickness of about 1 inch. This helps ensure even cooking.

Season the Pork
Sprinkle both sides of the pork with salt and black pepper. Let it sit for 10-15 minutes to absorb the seasoning.

Set Up Breading Station
In three separate shallow dishes, set up your breading station: place all-purpose flour in the first dish, beat the eggs in the second dish, and add panko breadcrumbs to the third dish.

Bread the Pork
Dredge each piece of seasoned pork in the flour, shaking off any excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the pork in panko breadcrumbs, pressing gently to adhere the crumbs.

Heat the Oil
In a large frying pan or deep skillet, pour in vegetable oil to a depth of about 1 inch. Heat the oil over medium-high heat until it reaches 170°C (340°F).

Fry the Tonkatsu
Carefully place the breaded pork into the hot oil. Fry for about 5-6 minutes on each side, or until golden brown and cooked through. An instant-read thermometer should register at least 63°C (145°F) in the center of the pork.

Drain and Rest
Once cooked, transfer the tonkatsu to a plate lined with paper towels to drain any excess oil. Allow to rest for a few minutes.

Serve
Slice the tonkatsu into strips and arrange it on a plate with shredded cabbage. Drizzle tonkatsu sauce over the pork and serve with lemon wedges on the side.
