Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch. This will prevent the rice from becoming too sticky.

Cook the Sushi Rice
In a rice cooker, combine the rinsed sushi rice and 2.5 cups of water. Cook according to the rice cooker's instructions. Alternatively, you can cook it on the stove by bringing the water to a boil, then reducing to low heat, covering, and cooking for 18-20 minutes.

Season the Rice
Once cooked, transfer the rice to a large bowl. In a separate small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice using a spatula. Allow the rice to cool to room temperature.

Slice the Hamachi
Using a sharp knife, slice the hamachi sashimi into thin pieces, about 1/4 inch thick. Arrange the slices neatly on top of the sushi rice.

Assemble the Bowl
In a serving bowl, add a generous amount of the seasoned sushi rice. Top with the sliced hamachi.

Garnish and Serve
Sprinkle sesame seeds and chopped green onions over the hamachi. Serve with soy sauce, wasabi, and pickled ginger on the side for dipping.
