Preparing Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold running water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and 1.5 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce to low, cover, and cook for 18 minutes.

    Season the Rice

    In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Once the rice is done, remove from heat and let it sit, covered, for 10 minutes. Then transfer the rice to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Preparing the Fish

    Slice the Fish

    Using a sharp knife, slice the hamachi, salmon, and tuna into thin, even pieces, about 1/4 inch thick. Arrange them neatly on a clean plate.

Assembling the Dish

    Assemble the Bowl

    In a serving bowl, place a generous portion of sushi rice at the bottom. Artistically arrange the sliced fish on top of the rice.

    Garnish

    Add chopped scallions and sesame seeds on top of the fish. Serve with soy sauce, wasabi, and pickled ginger on the side.
