Method

Prepare Sushi Rice

    Rinse Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook Rice

    Combine the rinsed sushi rice and 2.5 cups of water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat, cover, and simmer for 20 minutes.

    Rest Rice

    Once cooked, remove from heat and let it sit covered for 10 minutes.

    Season Rice

    In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice using a wooden spatula.

    Cool Rice

    Let the seasoned rice cool to room temperature before using.

Prepare Sashimi Toppings

    Slice Fish

    Slice the fresh tuna and salmon into bite-sized pieces or thin sashimi slices.

    Prepare Avocado

    Halve the avocado, remove the pit, and slice it into thin wedges.

    Prepare Nori

    Cut the nori sheet into strips or small squares, depending on your preference.

Assemble Tekka Don

    Add Rice

    In a bowl, add a generous portion of the prepared sushi rice as the base.

    Add Sashimi

    Arrange the slices of tuna and salmon on top of the rice.

    Add Avocado

    Place the avocado slices around the sashimi for added freshness.

    Garnish

    Sprinkle sesame seeds and chopped green onions over the top for garnish.

    Serve

    Serve with soy sauce, wasabi, and pickled ginger on the side.
