    Prepare the Egg Mixture

    In a mixing bowl, crack the eggs and whisk them thoroughly using a fork or a whisk until the yolks and whites are fully combined.

    Add Seasoning

    Add the sugar, mirin, soy sauce, and salt to the egg mixture. Continue whisking until the sugar is dissolved and everything is well incorporated.

    Heat the Pan

    Heat a non-stick rectangular or square pan over low to medium heat. Add 1 tablespoon of vegetable oil and spread it evenly over the surface of the pan.

    Cook the First Layer

    Pour a small amount of the egg mixture into the pan, just enough to cover the bottom. Cook for about 1-2 minutes or until the edges start to set but the center is still slightly runny.

    Roll the Egg

    Using a spatula, gently roll the cooked egg towards the far edge of the pan. Leave the rolled egg in the pan.

    Repeat the Process

    Add another small amount of the egg mixture to the pan, lifting the rolled egg slightly so that the new mixture can flow underneath. Cook until set, then roll the cooked egg over the new layer. Repeat this process until all the egg mixture is used.

    Final Cooking

    Once the last layer is cooked, gently shape the rolled Tamago using the spatula for a compact form. Allow it to cook for another minute.

    Cool and Slice

    Remove the Tamago from the pan, place it on a cutting board, and let it cool for a few minutes. Slice it into pieces for serving.
