Method
Preparing Sushi Rice

Rinse the Sushi Rice
Start by rinsing 2 cups of sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium pot, combine the rinsed rice and 2.5 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes until the rice is tender.

Season the Rice
Once cooked, transfer the rice to a large bowl. Mix together 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1 teaspoon of salt until dissolved, then gently fold this mixture into the warm rice. Allow it to cool to room temperature.
Assembling Sushi

Prepare the Nori
Lay a sheet of nori shiny side down on a bamboo sushi mat.

Add Sushi Rice
Wet your hands with water to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

Add Fish and Toppings
Place slices of salmon, white fish, shrimp, snapper, and yellowtail in a line across the center of the rice.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Moisten the top border of the nori with a little water to seal the roll.

Slice the Roll
Using a sharp knife, slice the roll into 6 equal pieces. Wipe the knife with a damp cloth between cuts to maintain clean edges.
Serving

Prepare the Plate
Arrange the sushi pieces on a plate and serve with soy sauce, wasabi, and pickled ginger on the side.
