    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Sushi Rice

    In a rice cooker or pot, combine the rinsed sushi rice with 2 cups of water. Cook according to the rice cooker's instructions, or bring to a boil, then reduce heat and simmer covered for 20 minutes. Remove from heat and let it sit for another 10 minutes.

    Season the Rice

    In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until the sugar dissolves. Once the rice has rested, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

    Prepare the Fish

    While the rice is cooling, use a sharp knife to slice the fresh salmon, white fish, and snapper into thin sashimi-style pieces. If using raw shrimp, ensure they are cleaned and peeled.

    Prepare the Sushi Rolls

    Lay a nori sheet on a bamboo sushi mat. Wet your hands to prevent sticking and grab a handful of sushi rice. Spread the rice evenly over the nori, leaving a small margin at the top. Arrange slices of salmon, white fish, shrimp, and snapper across the center of the rice.

    Roll the Sushi

    Using the sushi mat, carefully roll the sushi away from you, pressing gently yet firmly to keep the roll compact. Once rolled, use a sharp knife to slice the roll into 6-8 pieces.

    Serve

    Serve the sushi rolls with soy sauce, wasabi, and pickled ginger on the side. Enjoy your sushi dinner!
