Sake Don Preparation

Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Sushi Rice
In a rice cooker or pot, combine the rinsed sushi rice and water. Cook according to the rice cooker instructions or bring to a boil, then reduce to low heat, cover, and simmer for 18-20 minutes. Remove from heat and let it sit covered for another 10 minutes.

Season the Sushi Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl, pour the vinegar mixture over it, and gently fold the rice with a spatula to combine. Allow it to cool to room temperature.

Slice the Salmon
Thinly slice the fresh salmon sashimi and smoked salmon sashimi into bite-sized pieces.

Assemble the Sake Don
In a bowl, add a generous serving of sushi rice as the base. Arrange the fresh and smoked salmon sashimi beautifully on top of the rice.

Garnish and Serve
Drizzle soy sauce over the salmon, add a dollop of wasabi on the side, and top with pickled ginger, sesame seeds, and chopped green onions. Serve immediately.
