    Preparation of Saba Fish

    Rinse the saba fish under cold water and pat them dry with paper towels.

    Season the Fish

    Sprinkle salt and black pepper evenly over both sides of the saba fish. Allow the fish to sit for about 10 minutes to absorb the seasoning.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fish

    Carefully place the seasoned saba fish in the hot oil. Fry for about 4-5 minutes on each side or until the skin is crispy and golden brown. Remove the fish and drain on paper towels.

    Prepare the Broil Sauce

    In a small bowl, mix the soy sauce, minced garlic, and minced ginger together to create a marinade.

    Broil the Fish

    Preheat the broiler in your oven. Place the fried saba fish on a baking sheet and brush the soy sauce mixture over the top of the fish. Broil for 2-3 minutes until the sauce bubbles and caramelizes.

    Serve

    Transfer the broiled saba fish to a serving platter. Garnish with chopped green onions and serve with lemon wedges on the side.
