    Prepare the Chicken

    Cut the chicken thighs into bite-sized pieces and season with salt and black pepper.

    Cook the Onions

    In a large skillet, add a little oil over medium heat and sauté the thinly sliced onions until they become translucent, about 3-4 minutes.

    Add Chicken to the Skillet

    Add the seasoned chicken pieces to the skillet with the onions and cook until the chicken is browned on all sides, about 5-7 minutes.

    Make the Sauce

    In a bowl, mix together soy sauce, mirin, and dashi stock. Pour this mixture over the chicken and onions in the skillet.

    Simmer

    Reduce the heat to low and let the mixture simmer for about 10 minutes, allowing the flavors to meld and the chicken to cook through.

    Add the Eggs

    Lightly beat the eggs in a bowl, then slowly pour them over the chicken mixture in the skillet. Cover and let it cook for an additional 5 minutes, until the eggs are set.
