Osaka Oshi Zushi

Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice in a rice cooker or pot with 2 cups of water. Once cooked, let it sit covered for 10 minutes.

Season Sushi Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm sushi rice. Allow to cool to room temperature.

Layer Sushi
In a sushi mold or a square container, spread a layer of sushi rice (about half the rice). Press it down firmly. Next, layer the fresh sashimi on top of the rice.

Finish Sushi
Add another layer of sushi rice on top of the sashimi, pressing down to compact. Cover with a sheet of nori and press down again. Let it sit for 10 minutes, then cut into squares.

Serve
Serve the Osaka Oshi Zushi with soy sauce, wasabi, and pickled ginger on the side.
Miso Soup

Prepare Dashi Stock
In a pot, bring 4 cups of dashi stock to a simmer over medium heat.

Mix Miso Paste
In a small bowl, whisk 3 tablespoons of miso paste with a small amount of hot dashi to dissolve it, then add it back to the pot.

Add Tofu and Seaweed
Add the cubed tofu and wakame seaweed to the soup. Heat gently for 2-3 minutes until warmed through.

Finish with Green Onions
Just before serving, stir in the sliced green onions and remove from heat.

Serve
Serve hot as a side for the Osaka Oshi Zushi.
