Method

Mochi Dough Preparation

    Mix Dry Ingredients

    In a large bowl, mix the sweet rice flour and granulated sugar together until well combined.

    Add Water

    Gradually add water to the dry mixture while stirring continuously to prevent lumps from forming.

    Prepare for Microwaving

    Transfer the mixture to a microwave-safe bowl or dish. Cover it with plastic wrap, leaving a small vent for steam to escape.

    Cook the Dough

    Microwave on high for 1 minute, then stir. Repeat this process two more times for a total of 3 minutes, stirring after each minute until the dough is translucent.

    Transfer and Cool Dough

    Once cooked, dust a clean surface with cornstarch and transfer the mochi dough onto it. Let it cool slightly.

Forming Mochi Ice Cream

    Divide Dough

    Once the mochi dough is cool enough to handle, divide it into 8 equal portions.

    Shape the Mochi

    Flatten each portion into a round disk, approximately 3 inches in diameter.

    Add Ice Cream

    Scoop a small amount of vanilla ice cream (about 1/4 cup) and place it in the center of each mochi disk.

    Carefully fold the edges of the mochi dough over the ice cream to seal it completely. Pinch the edges to ensure it's well sealed.

    Wrap each mochi ice cream ball in plastic wrap and freeze for at least 2 hours until firm.

    In a small saucepan, combine the semi-sweet chocolate chips and heavy cream over low heat.

    Stir continuously until the chocolate is melted and the mixture is smooth.
