Directions

  1. 1

    Prepare the Oysters

Start by shucking the oysters carefully to avoid damaging them. Rinse them under cold water and set aside.

  2. 2

    Set Up Breading Station

In one bowl, place the all-purpose flour. In a second bowl, whisk together the eggs and milk until well combined. In a third bowl, mix the cornmeal, salt, black pepper, garlic powder, and paprika.

  3. 3

    Bread the Oysters

Dredge each oyster in the flour, shaking off any excess. Then dip it into the egg mixture, allowing any excess to drip off. Finally, coat the oyster with the cornmeal mixture, pressing lightly to adhere.

  4. 4

    Heat the Oil

In a large, deep skillet or a heavy-bottomed pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Oysters

Once the oil is hot, carefully add the breaded oysters in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.

  6. 6

    Serve

Serve the fried oysters hot with lemon wedges and your favorite hot sauce on the side for dipping.
