Preparation and Cooking

    Prepare the Chicken

    Start by trimming any excess fat from the chicken thighs. Cut the chicken into bite-sized pieces.

    Marinate the Chicken

    In a bowl, combine the chicken pieces with salt, black pepper, garlic powder, and paprika. Mix well and let it marinate for at least 30 minutes.

    Prepare the Breading

    In a separate bowl, whisk together cornstarch, all-purpose flour, baking powder, salt, and black pepper until combined.

    Prepare the Egg Wash

    In another bowl, beat the eggs until well combined. This will be used for coating the chicken.

    Coat the Chicken

    Dip each marinated chicken piece into the egg wash, then coat it thoroughly with the flour mixture. Shake off any excess.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches about 180°C (350°F).

    Fry the Chicken

    Carefully place the breaded chicken pieces into the hot oil, cooking in batches if necessary to avoid overcrowding. Fry for about 5-7 minutes, or until golden brown and cooked through.

    Once cooked, remove the chicken from the oil and place it on a paper towel-lined plate to drain excess oil. Serve hot with the original house sauce.
