    Rinse the Japanese short-grain rice under cold water until the water runs clear. Drain and combine with 1.25 cups of water in a rice cooker. Cook according to the rice cooker's instructions or bring to a boil in a pot, then reduce heat, cover, and simmer for 18-20 minutes.

    Cook Ground Beef

    In a skillet over medium heat, add the sesame oil. Once hot, add the ground beef and cook until browned, breaking it up with a spatula, about 5-7 minutes.

    Stir in the soy sauce and mirin, cooking for an additional 2-3 minutes until the mixture is well combined and heated through.
