Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine mesh strainer and rinse it under cold running water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium heat, then reduce the heat to low and cover. Cook for 18-20 minutes until the water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Season the Rice
In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl, and gently fold in the vinegar mixture using a wooden spatula. Let the rice cool to room temperature.
Prepare Toppings

Slice the Tuna
Using a sharp knife, slice the fresh tuna into thin sashimi-style pieces.

Prepare the Avocado
Cut the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin wedges.

Slice the Cucumber
Cut the cucumber in half lengthwise and then slice it into thin half-moon shapes.

Prepare Serving Bowl
In a serving bowl, layer a generous amount of sushi rice as the base.

Assemble the Tekka Don
Arrange the sliced tuna, avocado, and cucumber artistically on top of the rice. Drizzle with soy sauce and sprinkle sesame seeds over the top. Serve with wasabi on the side.
