Prepare the Crawfish
Rinse the live crawfish in fresh water to remove any mud or debris. Discard any dead crawfish that float to the top.

Boil Water
In a large pot, bring 4 gallons of water to a rolling boil over high heat.

Add Salt and Seasoning
Once the water is boiling, add 1 cup of salt and 1 cup of crawfish boil seasoning to the pot. Stir well to combine.

Add Aromatics
Cut the lemons in half and squeeze the juice into the pot. Add the lemon halves, garlic cloves (crushed), and whole onions (peeled) to the boiling water.

Add Crawfish
Carefully add the rinsed crawfish to the boiling pot. Stir gently to ensure they are evenly distributed in the water.

Cook Crawfish
Bring the water back to a boil, then cover the pot and turn off the heat. Allow the crawfish to soak in the hot water for 5-7 minutes, or until they turn bright red.

Optional Sausage
If using sausage, add it to the pot with the crawfish and let it soak for the same amount of time.

Serve
Drain the crawfish and vegetables, and serve them on a large table covered with newspaper or a platter. Garnish with fresh parsley if desired.
