    Prepare the Base

    Heat olive oil in a large pot over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until softened.

    Add Garlic and Meats

    Stir in the minced garlic, ground beef, and ground pork. Cook until the meat is browned, breaking it apart with a spoon.

    Deglaze with Wine

    Pour in the red wine and let it simmer for about 5 minutes, scraping the bottom of the pot to release any browned bits.

    Add Tomatoes and Simmer

    Add the crushed tomatoes, milk, bay leaves, salt, and black pepper. Bring to a boil, then reduce heat to low and let simmer for at least 1.5 to 2 hours, stirring occasionally.

    Finish the Sauce

    Once the sauce has thickened, stir in the chopped basil and remove from heat.

    Cook Tagliatelle

    While the sauce is simmering, cook the tagliatelle in boiling salted water according to package instructions. Drain and set aside.

    Serve

    Toss the cooked tagliatelle with the Bolognese sauce. Serve hot with additional basil if desired.
