Preparing the Salad

Prepare the Lettuce
Remove the outer leaves of the iceberg lettuce and discard. Cut the head in half and then chop it into bite-sized pieces. Rinse under cold water and spin dry in a salad spinner or pat dry with paper towels.

Prepare the Olives
If the green olives are whole, slice them in half or leave them whole based on your preference.
Making the Dressing

Combine Ingredients
In a medium bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and black pepper until the dressing is well combined and emulsified.

Taste and Adjust
Taste the dressing and adjust the seasoning if necessary, adding more salt or pepper to taste.
Assembling the Salad

In a large salad bowl, combine the chopped iceberg lettuce and green olives.
