Salad Preparation
Prepare the Ingredients
Wash the iceberg lettuce thoroughly under cold water. Remove any damaged outer leaves, and chop the lettuce into bite-sized pieces. Place in a large salad bowl.
Grill the Chicken
Preheat a grill or grill pan over medium heat. Season the chicken breasts with salt and black pepper. Grill the chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.
Prepare the Apples
Wash the apples, slice them into thin wedges, and remove the core. You can keep the skin on for added texture and nutrients.
Combine Ingredients
In the salad bowl, add the grilled chicken slices, apple wedges, sunflower seeds, and raisins to the chopped iceberg lettuce. Toss gently to combine.

Make the Dressing
In a blender or food processor, combine the fresh raspberries, olive oil, red wine vinegar, honey, salt, and black pepper. Blend until smooth. Taste and adjust seasoning if necessary.
Dress the Salad
Drizzle the raspberry vinaigrette over the salad just before serving. Toss the salad gently to ensure all ingredients are well coated with the dressing.
