Empanada Dough

    Make the Dough

    In a large bowl, mix the all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. In a separate bowl, whisk together the egg and water, then add to the flour mixture. Mix until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Prepare the Filling

    Heat the olive oil in a skillet over medium heat. Add the chopped onion and garlic, sautéing until soft. Add the ground beef, salt, and black pepper. Cook until the beef is browned and cooked through. Remove from heat and stir in the shredded cheddar cheese until melted. Allow to cool slightly.

    Prepare the Filling

    In a separate skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until soft. Add the ground beef, salt, and black pepper. Cook until browned and fully cooked. Remove from heat and allow to cool.

    Make the Fries

    Peel and cut the potatoes into thin strips. Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy. Remove from the oil and drain on paper towels. Season with salt to taste.

Assemble Empanadas

    Fill and Bake the Empanadas

    Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut into circles (about 4 inches in diameter). Place a tablespoon of the filling (either beef & cheese or ground beef) in the center of each circle. Fold over and seal the edges with a fork. Place on a baking sheet lined with parchment paper. Bake for 20-25 minutes until golden brown.
