Preparation of Base

    Heat Cream and Milk

    In a medium saucepan, combine the heavy cream and whole milk. Heat over medium heat until the mixture is hot but not boiling.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

    Combine Mixtures

    Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly to temper the eggs. This prevents the yolks from curdling.

    Cook the Custard

    Return the mixture to the saucepan and cook over low heat, stirring constantly until the custard thickens enough to coat the back of a spoon.

    Add Vanilla Extract

    Remove from heat and stir in the pure vanilla extract. If using a vanilla bean, split it open, scrape the seeds into the mixture, and add the pod for extra flavor.

Chilling and Serving

    Let the custard cool to room temperature. Once cool, strain through a fine-mesh sieve into a bowl to remove any bits of cooked egg.

    Once chilled, pour the custard into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
