Cook the Beef
In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Season the Mixture
Stir in the cumin, paprika, salt, and black pepper. Cook for another 2 minutes to allow the flavors to meld.

Combine Additional Ingredients
Remove from heat and mix in the chopped hard-boiled eggs and olives (if using). Allow the filling to cool.

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Add the cubed butter and rub it into the flour until the mixture resembles coarse crumbs.

Add Wet Ingredients
Make a well in the center of the mixture and add the egg and ice-cold water. Mix until the dough comes together. If too dry, add a little more water, a tablespoon at a time.

Chill the Dough
Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Assembling Empanadas

Roll Out the Dough
On a floured surface, roll out the chilled dough to about 1/8 inch thick. Use a round cutter (about 4-5 inches in diameter) to cut out circles.

Fill Empanadas
Place a spoonful of the beef filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges for a decorative touch.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Egg Wash
Beat the egg in a small bowl and brush the mixture over the tops of the empanadas for a golden finish.

Bake Empanadas
Arrange the empanadas on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown.
