Prepare the Bowl Base

    Cook the Quinoa

    Rinse 1 cup of quinoa under cold water. In a saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring it to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.

    Add Chickpeas

    Once the quinoa is cooked and fluffed, stir in the drained and rinsed chickpeas. Mix well and set aside.

Prepare the Vegetables

    Chop the Vegetables

    Dice the bell pepper, cucumber, and slice the avocado. Halve the cherry tomatoes and set all the vegetables aside for assembly.

    Prepare Spinach

    Wash the spinach leaves thoroughly and pat them dry. Set them aside.

Make the Spicy Mayo

    Combine Ingredients

    In a small bowl, mix together 1 cup of mayonnaise, 2 tablespoons of Sriracha, and the juice of 1 lime. Stir until smooth and adjust the spice level according to your preference.

Assemble the Power Bowl

    Layer Ingredients

    In a large bowl or plate, start by layering the quinoa and chickpea mixture as the base. Then add a handful of spinach leaves, followed by the diced bell pepper, cucumber, cherry tomatoes, and sliced avocado.

    Add Toppings

    Drizzle the spicy mayo over the top of the bowl. Sprinkle with pumpkin seeds, fresh cilantro, salt, and pepper to taste.
