    In a large mixing bowl, combine the flour and salt.

    Gradually add the boiling water to the flour while stirring with chopsticks or a wooden spoon until a shaggy dough forms.

    Once cool enough to handle, knead the dough on a lightly floured surface for about 8–10 minutes until smooth and elastic.

    Cover the dough with a damp cloth or plastic wrap and let it rest for at least 30 minutes.

Filling

    Place the shredded cabbage in a colander and sprinkle lightly with salt. Let sit for 10 minutes to draw out moisture, then squeeze out excess water with a clean kitchen towel.

    In a large bowl, combine the drained cabbage, grated carrot, crumbled tofu, green onions, garlic, ginger, soy sauce, sesame oil, salt, and black pepper.

    Mix well until the filling is evenly combined and cohesive.

Assembly

    Divide the rested dough into 4 pieces. Roll each piece into a log and cut into 6–8 pieces.

    Roll each piece into a ball and then flatten into a disc. Using a rolling pin, roll each disc into a thin circle about 3 inches in diameter.

    Place about 1 teaspoon of filling in the center of each wrapper. Fold the dough over the filling to create a half-moon shape, then pleat and pinch the edges to seal tightly.

    Repeat until all dumplings are formed. Keep the dumplings covered with a damp towel to prevent drying.

Cooking

    Heat 1 tablespoon of vegetable oil in a large nonstick skillet over medium-high heat.

    Place 10–12 potstickers flat-side down in the skillet and cook for 2–3 minutes until the bottoms are golden brown.

    Carefully add 1/4 cup of water to the skillet, then immediately cover with a lid to steam.

    Steam the potstickers for 5–6 minutes or until the water has evaporated and the wrappers are tender.

    Remove the lid and let the potstickers cook uncovered for another 1–2 minutes to crisp up the bottoms again.

Dipping Sauce
