Prepare the Fries

    Cut the Potatoes

    Peel the russet potatoes and cut them into 1/4-inch-thick matchstick fries. Rinse the cut potatoes under cold water to remove excess starch.

    Soak the Potatoes

    Place the rinsed fries in a large bowl of cold water and let them soak for at least 30 minutes, or up to 2 hours. This helps to make them crispier when fried.

    Dry the Potatoes

    Drain the potatoes and spread them out on a clean kitchen towel. Pat them dry thoroughly to prevent oil splatter during frying.

    Fry the Potatoes – First Fry

    Heat the vegetable oil in a deep fryer or large heavy-bottomed pot to 325°F (165°C). Fry the potatoes in batches for about 4–5 minutes, or until soft but not yet golden. Remove and drain on paper towels. Let them rest for at least 10 minutes.

    Fry the Potatoes – Second Fry

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for 2–3 minutes, or until golden brown and crispy. Remove and drain on fresh paper towels. Sprinkle with salt immediately.

Season and Garnish

    Add Truffle Oil

    While the fries are still hot, drizzle with truffle oil. Toss gently to coat evenly.

    Add Cheese and Seasonings

    Sprinkle the fries with freshly grated Parmesan cheese, garlic powder, and black pepper. Toss again to distribute the flavorings.

    Garnish

    Transfer fries to a serving dish and sprinkle with chopped fresh parsley before serving.
