Sweet Potato Fries
Chipotle Aioli
Method
Sweet Potato Fries
- 1
Preheat the oven
Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- 2
Prepare the sweet potatoes
Peel the sweet potatoes and cut them into evenly sized matchstick fries, about 1/4-inch thick.
- 3
Coat the fries
In a large bowl, toss the sweet potato fries with cornstarch until evenly coated. Then drizzle with olive oil and sprinkle with paprika, garlic powder, salt, and black pepper. Toss again to evenly coat everything.
- 4
Arrange on baking sheet
Spread the fries out in a single layer on the prepared baking sheet, making sure they are not overcrowded (use two sheets if necessary).
- 5
Bake the fries
Bake in the preheated oven for 15 minutes. Flip the fries and continue baking for another 10–15 minutes, or until golden brown and crispy on the edges.
- 6
Cool slightly
Remove from the oven and let the fries rest for 5 minutes before serving. This helps them crisp up further.
Chipotle Aioli
- 7
Prepare the aioli
In a blender or food processor, combine mayonnaise, chipotle peppers in adobo sauce, garlic, lime juice, and salt. Blend until smooth.
- 8
Chill
Transfer the aioli to a small bowl and refrigerate for at least 15 minutes before serving to allow flavors to meld.
