Salad Base

Method

Prepare the Salad Base

    Prepare quinoa

    If not already cooked, rinse 1/2 cup of dry quinoa under cold water. Combine with 1 cup of water in a pot, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Let cool.

    In a large mixing bowl, combine the mixed greens, cooked and cooled quinoa, diced avocado, sliced cucumber, cooked edamame, crumbled feta cheese, and roasted pumpkin seeds.

Make Green Goddess Dressing

    In a blender or food processor, add the Greek yogurt, parsley, basil, green onion, garlic, lemon juice, olive oil, salt, and pepper.

    Blend until smooth. If the dressing is too thick, add water 1 teaspoon at a time until desired consistency is reached.

    Taste and adjust seasoning as needed with additional salt, pepper, or lemon juice.

Assemble the Salad

    Drizzle the desired amount of Green Goddess dressing over the salad base and toss gently to combine and coat all ingredients evenly.

    Serve immediately, garnished with additional pumpkin seeds or feta if desired.
