Steak Preparation

Season the Steak
Pat the prime sirloin steak dry with paper towels. Season both sides with salt and black pepper.

Chimichurri Sauce Preparation

Combine Ingredients
In a medium bowl, combine chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Mix well until combined.

Let it Sit
Allow the chimichurri sauce to sit at room temperature for 15-30 minutes to let the flavors meld.
Fresh Cut Fries Preparation

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, resembling fries.

Fry the Potatoes
In a large pot, heat vegetable oil to 350°F (175°C). Carefully add the potato strips in batches and fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Season with salt immediately.
Assemble and Serve

Plate the Dish
On a serving plate, place a generous portion of fresh cut fries. Slice the rested steak against the grain and place it on top of the fries.
