Prepare Grains

Cook Quinoa and Farro
In a medium pot, combine quinoa, farro, and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 20 minutes or until the grains are tender and water is absorbed. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
Cook Salmon

Grill or Bake
If grilling, place the salmon fillets skin-side down on the grill and cook for about 5-6 minutes per side, or until the salmon is cooked through and flakes easily with a fork. If baking, place on a lined baking sheet and bake for about 12-15 minutes.
Make Lemon Herb Sauce

Mix Sauce Ingredients
In a small bowl, combine chopped parsley, dill, lemon juice, minced garlic, salt, and black pepper. Mix well and set aside.
Sauté Vegetables

Cook Vegetables
In a large skillet, heat a tablespoon of olive oil over medium heat. Add asparagus, bell pepper, and zucchini. Sauté for about 5-7 minutes, or until vegetables are tender but still vibrant.
Plate and Serve

Assemble the Dish
On each plate, serve a portion of the cooked grains, topped with a salmon fillet. Drizzle the lemon herb sauce over the salmon and arrange the sautéed vegetables on the side.
