Method
Prepare the Infused Pineapple Juice

Infuse rosemary and pineapple
In a small bowl or container, combine pineapple chunks and 1 sprig of rosemary. Lightly muddle to release the flavors. Let sit for 10 minutes to infuse.

After infusion, strain the mixture through a fine mesh sieve into a small pitcher or measuring cup to extract the juice. Discard solids.
Assemble the Drink

In a cocktail shaker or large glass, combine the infused pineapple juice, grapefruit juice, and cold black tea. Stir or shake gently to mix.

Fill a serving glass with ice cubes. Pour the juice mixture over the ice.

Top with Fever-Tree ginger beer and stir gently to combine without losing the fizz.
Garnish and Serve

Garnish with a fresh rosemary sprig and a wedge of grapefruit on the rim of the glass.
