Method
Roasting Tomatoes

Prepare the Tomatoes
Preheat the oven to 400°F (200°C). Slice the Roma tomatoes in half lengthwise and place them cut-side up on a baking sheet.

Season the Tomatoes
Drizzle the tomatoes with olive oil and balsamic vinegar, then sprinkle with salt and black pepper.

Roast the Tomatoes
Roast in the oven for 25-30 minutes until the tomatoes are soft and slightly caramelized. Remove from the oven and let cool slightly.
Making Whipped Feta Cheese

Blend the Ingredients
In a food processor, combine feta cheese, cream cheese, olive oil, lemon juice, and minced garlic.

Whip the Cheese
Blend until smooth and creamy. Add fresh herbs and pulse a couple of times to combine. Adjust seasoning to taste.
Preparing Garlic Crostini

Slice the Baguette
Slice the baguette into ½-inch thick pieces.

Toast the Crostini
Place the slices on a baking sheet and toast in the oven at 400°F (200°C) for about 8-10 minutes, flipping halfway through, until golden and crispy.

Rub with Garlic
Once toasted, rub one side of each crostini with the cut side of a garlic clove for added flavor.
Assembling the Dish

Plate the Components
Arrange the roasted tomatoes on a serving platter, dollop the whipped feta cheese on the side, and serve with the garlic crostini.

Optionally, sprinkle more fresh herbs over the tomatoes for garnish. Serve immediately.
