Preheat Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare Tomatoes
In a mixing bowl, toss the cherry tomatoes with olive oil, minced garlic, salt, black pepper, and thyme leaves until well coated.

Roast Tomatoes
Spread the tomatoes on the prepared baking sheet in a single layer. Roast for 20-25 minutes, or until the skins are blistered and the tomatoes are soft and slightly caramelized. Remove from oven and cool slightly.
Whipped Goat Cheese

Blend Ingredients
In a food processor or using a hand mixer, combine goat cheese and cream cheese until smooth and fluffy.

Add Flavor
Add olive oil, chopped basil, salt, and pepper to the cheese mixture. Blend again until fully incorporated and creamy. Set aside.

Assemble Bruschetta
Spread a generous layer of whipped goat cheese onto each slice of grilled bread. Top with a spoonful of roasted tomatoes.
