Marinating the Prawns

Prepare the Marinade
In a bowl, combine lime juice, minced garlic, grated ginger, chili powder, and salt. Mix well.

Marinate the Prawns
Add the prawns to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
Making the Coconut Broth

Combine Ingredients
In a large pot, combine coconut milk, chicken or vegetable broth, and red curry paste. Stir until the curry paste is fully dissolved.

Add Mushrooms and Seasoning
Add sliced mushrooms, soy sauce, and brown sugar to the pot. Bring to a gentle simmer over medium heat.

Simmer the Broth
Let the broth simmer for about 10 minutes to allow the flavors to meld together.
Cooking the Noodles and Prawns

Cook the Rice Noodles
In a separate pot, cook the rice noodles according to package instructions. Drain and set aside.

In serving bowls, place a generous amount of rice noodles. Ladle the hot coconut broth over the noodles, followed by grilled prawns.

Top with sliced bell pepper, julienned carrot, fresh bean sprouts, and chopped cilantro. Serve with lime wedges on the side.
