Method

Marinating the Prawns

    In a bowl, combine lime juice, minced garlic, grated ginger, chili powder, and salt. Mix well.

    Add the prawns to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.

Making the Coconut Broth

    In a large pot, combine coconut milk, chicken or vegetable broth, and red curry paste. Stir until the curry paste is fully dissolved.

    Add sliced mushrooms, soy sauce, and brown sugar to the pot. Bring to a gentle simmer over medium heat.

    Let the broth simmer for about 10 minutes to allow the flavors to meld together.

Cooking the Noodles and Prawns

    In a separate pot, cook the rice noodles according to package instructions. Drain and set aside.
